Is there anything better?
I doubt it! Which is why I’m sharing one of my (not guilty) pleasures of a super decadent breakfast in bed with a few tips and a showstopper waffle recipe.
These waffles are gluten-free, dairy-free, and low carb, and I honestly think they are just as easy as the unhealthy version. If that isn’t incentive enough, you can eat them snugly in your bed with zero guilt because they are good for you. (#selfcare)
BUT…breakfast in bed isn’t all fun and games. For the perfect breakfast in bed, it’s all about the balance of ambiance and ease. If you want a hassle-free experience that is both relaxing and Instagram worthy, you’ll want to keep a few things in mind.
How To Slay 🥞 Breakfast In Bed
Yes, you can successfully eat while lying down all weekend long!
1. Shhhhh! Keep It Down
Even if you’re going solo, it’s early(ish) and keeping the calm and quiet vibes rolling is important to achieve the perfect breakfast in bed. If you are hosting breakfast, a quiet prep ensures you won’t wake your dining partner.
Skip any foods that need a blender or a seriously long bake-time. Waffles and pancakes are perfect because you can whip them up without creating a ruckus.
2. Invest In A Sturdy Tray
Even if you have one of those fancy mattresses that can withstand a bowling ball drop without an ounce of wine spilling, you need a good tray. Plates, cups, and bowls need a place to rest and that place is not directly on your white sheets. Trust me.
Look for a tray with edges and handles that will keep all of your pretty plates steady and make delivery and cleanup effortless.
3. Always Expect Messes
Whether you’re eating delicious waffles drenched in berries and syrup or a crusty muffin and coffee, there will be a mess. But that doesn’t mean you sacrifice your Instagram-worthy tray with paper towels.
Vanity Fair® Extra Absorbent Napkins, are the perfect solution to mid-meal messes, and basically the only thing saving my sheets when I’m breakfast-ing in bed. They’re surprisingly absorbent, and even clean up spills better than the leading mid-tier paper towel. A must when it comes to syrup splashes and juicy berries! Plus, they are pretty.
Lastly, Find A Great Recipe
Breakfast in bed should be about the foods you love without guilt! My favorite is these classic grain-free waffles with a handful of smashed berries and sugar-free syrup. Top it off with a coffee to sip and you’re golden!
- 3 tbsp Almond Flour
- 2 tbsp Coconut Flour
- 2 tbsp Granulated Low Carb Sweetener
- ¼ tsp Xanthan Gum (for texture)
- ½ tsp Baking Powder
- ¼ tsp Baking Soda*
- 2 large Eggs
- ¼ cup Non-Dairy Milk
- 1 tsp Lemon Juice
- Pinch Salt- but seriously don't skip it!
- Whisk together the dry ingredients until combined.
- Beat the eggs, milk, and lemon juice until smooth.
- Combine the wet with the dry and mix. Let the batter rest while you heat the waffle iron. This helps the coconut flour absorb some of the moisture!
- Heat waffle iron to medium-high and spray with non-stick oil.
- Portion ¼ cup into each well (my iron has four wells) and close. Cook until golden.
- Repeat with remaining batter, about two more ¼ cup portions.
- Stack and serve with smashed berries and syrup!
*Baking soda does 2 things in this recipe: a little leavening and browning. You can skip the bs and lemon juice if you don't have it and they still work but are a bit lighter!
