It’s OK to be Basic→Broccoli Soup

It was somewhere in the ballpark of 80° today (or yesterday…depending on when you get around to reading this) with a humidity level of approximately 200%. Sticky hot. Not that I would normally mind. Often times when the heat and humidity get together and wreak havoc on my hair and makeup, I combat it by hunkering down on my patio with a top knot and a bottle of Pinot.

You know, to sweat out the toxins. It’s a beautiful thing. 

So of course, on this screaming hot day I’ve come down with some sort of illness. One that makes drinking booze sound awful and getting off of the couch a nearly impossible task. No patio time for Liz on what will likely be the last awesomely hot and sticky day of the summer.

And so here I lay, wallowing in self pity on the couch, chomping on my last (of 20) Halls cough drop with a pile of tissue quickly mounding next to my feet. I needed to consume more than just throat candy. I had zero energy. And then I remembered the soup.

Yes! How could I have forgotten the most basic solution that was virtually effortless with maximum return as a feel good comfort food just sitting in my pantry? Probably, I was delirious from eating an entire bag of cough drops.

Behold, a basic broccoli soup for basic babes like moi.

Basic Broccoli Soup

So Basic. So nourishing. So steamy and broccoli-y.

Super Simple Broccoli Soup

Basic Broccoli and Egg Soup

You could omit the egg if you aren’t a fan but it really does add a little substance to the soup along with protein, iron, and healthy dose of fats. Trust me, it’s worth the extra five minutes.

Better yet…leave the egg out and make a double or triple batch. Fill a few freezer containers with this simple soup and thank yourself when it’s 10 below zero and the last thing you want to do is cook dinner! Hey, you can even add the egg if you reheat via stove top!

    Looks delicious!!! Hope you feel better- being sick in the summer is the worst! Bookmarking this for the next time I’m sick (hopefully that won’t happen for a while)!!!!

        Glad you’re feeling better! Omg – I went in Rite Aid the other day and the cashier informed me that they were giving flu shots. The season is creeping up! Seriously, vitamin c and hand sanitizer for the win!!!!

    Omg this sounds delicious! I’m definitely saving this recipe 🙂 I’ve also been trying to get more greens into my diet so this is a great way to use broccoli (I’m not really a fan of it plain!) xxx

      I’m the exact same way with broccoli! I would rather have it prepared along with other foods over just eating it plain 🙂 Yay for more greens! I should be doing that, too! 🙂

    Oh my god this sounds delicious mushroom and brocolli are my two fav things! It is SO hot lately even here, so I am liking the idea of hair up and a nice glass of wine haha xx

      I can’t wait until I’m back to 100% health so I can indulge in a glass myself! Until then it’s hot tea and vitamins lol 🙂
