Well, for starters it’s action packed and bursting with drama so everyone should familiarize themselves with the series, but more importantly because while binge watching I noticed an interesting theme that I found myself relating to over and over again. OK. So you stay away from the sweet stuff and really get it all out of your system. Detox, jump start diet plan, whatever floats your boat. For a short period of time you are the reformed Stephan (main character, vamp, blood addict) but if…or when…the day comes that you do indulge a little you transform. You are a proverbial freight train barreling off the tracks. You are bad vampire Stephan who has turned into a relentless monster just living for the next fix. Self control be damned! Sometime last year I stumbled upon an amazing blogger/cookbook author/keto genius mariamindbodyhealth.com had some great insight into cutting the craving and nixing the feast or famine mentality. Not to say I am perfect, nor do I eat a keto diet, but her recipes inspired me to change the way I look at food. WHICH brings me to this yummy little recipe I concocted to satisfy my sugar lust.
Whip ’em Up
1 Whole Egg AND 3 Egg yolks
2 tbsp Vanilla Protein Powder
1/2 cup Swerve or Truvia Baking Blend (Note: Truvia BB has more carbs)
3 to 4 tbsp lemon juice (depending on how “lemony” you prefer them, I used 4)
1/2 tsp Vanilla Extract
1 cup Almond Flour
3 tbsp Coconut Oil or Real Butter
5 tbsp Swerve Confectioner PLUS a bit more to dust on top post baking
Preheat oven to 350°
Prepare Crust: In a large mixing bowl, combine almond flour and sweetener and mix well. Add softened butter, mix (I use my hands), and press into 8×6 glass baking dish. Bake for 10 minutes or until edges begin to brown.
Prepare Lemon Filling: In a large mixing bowl, combine 1 whole egg and 3 egg yolks with sweetener and protein powder. Mix well. Add in lemon juice and vanilla, mix, and pour over previously baked crust. Bake at 350° for 15 minutes. Let cool then sprinkle with Confectioner’s Swerve.
***NOTE: At first attempt making these I didn’t think to pre-cook the crust and it absorbed into the lemon filling during the baking process, as you can see in the photos. If you bake the crust first it will not do this and you will have a beautiful, crumbly crust! I ate the second batch before I could snap any pictures. They were that good 🙂
