I will not be told how many mocktails is acceptable!
Let me refill! Let me live!!!
Mainly because it’s one billion degrees on a typical August day in North Carolina and hydration is very important. And while I like to hydrate with a cute little Probiotic Cocktail (fave Coconut Kefir Paloma) once in a while, sometimes alcohol isn’t want I’m yearning for. And we know I’m almost never yearning for water…so here we are!!!

If you’re a lazy Bartender, You’ll love this Mocktail
The best thing about this drink is that the can does most of the work for you. It already tastes good alone so we’re halfway there!
The fresh peach adds a summery flavor, thyme makes it pretty for the influencers, and tiny bits of fresh ginger gives it just enough bite to balance out the fruitiness and remind me I’m still alive in this heat.
You don’t need anything fancy like a cocktail shaker but you could try to find a cocktail stirrer.
Mine is named Zach and he is my fiancé who is always willing to stir something up for me.

Alright Ladies Let’s Gather our potions…I mean ingredients!
It’s more fun to call things potions but for the sake of SEO, I’ll stop. I need to make a living and you reading this blog is giving me at least 45 cents 🥲
Sanpellegrino Peach Clementine Soda (it’s zero sugar FYI)
This is the sparkling base of the drink and gives you both peach and citrus flavor without having to mix several different juices together.You can use any sparkling soda or water you’d like but this one is delicious and sugarless!
Fresh Peach, baby!
Use a ripe, juicy peach if you can. We’re muddling it directly into the glass, so a hard, underripe peach will be gross and depressing. The good news? You could abso-tutely use a slice of frozen peach that’s been thawed and it might not look as pretty but will taste pretty.
Fresh Thyme
Peach and thyme are SO good together. It tastes nothing like drinking a thanksgiving turkey (I promise). The thyme adds a subtle herbal flavor that adds to the peach without overpowering it.
Fresh Ginger
This is what gives the mocktail a little zing. Fresh ginger is much brighter than ground ginger here, so I wouldn’t substitute the dried stuff.
And I don’t strain it out because I enjoy biting down on tiny chunks of fresh ginger at the end of my drink. You know, to remind me how sober and responsible I’m being by drinking a mocktail.

Step By Step Instructions (that are kind of Unnecessary but it’s the rules)
- Start by adding your fresh peach, thyme, and ginger to the bottom of a glass.
- Gently muddle everything together to release the peach juices and the oils from the thyme. You don’t have to completely pulverize it (unless you’ve had a hard day and need to pulverize something). No shame in taking out your frustrations on a peach!
- Fill the glass with ice, then slowly pour the chilled soda over everything. Give it a gentle stir and finish with a fresh peach slice and a sprig of thyme.


Batch Cocktail/Mocktail Party?
Who doesn’t love to make everyone feel welcome (and slightly jealous) by offering a cute and trendy cocktail/mocktail option for guests?!?! This is the perfect one and yes, you can add booze as an option if you want. I’d choose vodka because I’m part Polish.
- Set out glasses with peach slices, fresh thyme, and ice, then let everyone top their own glass with a chilled can of Sanpellegrino. It looks impressive without requiring you to stand behind the counter making individual drinks all afternoon.
- You could actually prep a larger batch of the peach, thyme, and ginger mixture (already muddled) and spoon a little into each glass before serving. That way people don’t have to do manual labor just to get a mocktail.

Sparkling Peach & Thyme Mocktail
The perfect mocktail for those summer peaches!
Ingredients
- 1/4 inch Fresh Ginger peeled and sliced
- 1 Ripe Peach sliced into 1/4 inch pieces
- 1 can Peach and Clementine Zero Sugar Soda
- 1 sprig Fresh Thyme, plus more to garnish
- Crushed Ice
Instructions
- This recipe is to make ONE drink but you will have ingredients to make many! I suggest having mulitple drinks or inviting a friend (wink wink).
- Muddle 1 peach slice, peeled ginger, and thyme in a highball or Collins glass.
- Layer in more fresh peach slices, thyme, and crushed ice in the glass and top with SANPELLEGRINO peach soda. They have full sugar options and zero sugar options!
- Stir and serve.
Notes
To remove bits of ginger floating in your glass, you can muddle and mix the drink in a separate glass, then strain into your drinking glass filled with ice and peach slices! But I like biting into a hunk of rogue ginger just to feel something so...
