Roasted Cabbage as steak
No, that’s not a joke!
Roasted cabbage steaks are in no way, shape or form like steak steaks, but let’s be honest: you aren’t here for a steak replacement. You are here for a better way to eat cabbage, which is to smother it in pesto and two kinds of cheese and bake the heck out of it.
And, it’s keto friendly!
Presto, Pesto!
SO it’s no great surprise that an oily, herby, cheese-laden paste like pesto PLUS Feta and more Parmesan Cheese is going to make a lot of things taste better. If I were a lesser blogger, I’d say “duh”.
But what IS a surprise is that those items even make cabbage taste better because, honestly, I thought only butter could do that! #amazed
SO in lieu of this great discovery, I have given my butter crock a permanent break from cabbage duty and, just like my Smothered Greek Broccoli, will be roasting and pesto-ing from here on out.
Why Roast Cabbage?
Roasted cabbage might not be news to you, but for some of us (me) it’s a big deal. When you take a cabbage steak that has been smothered with delicious flavor and put it in a scorching hot oven, you get this new and amazing texture that has a sweetness and a tenderness to it that is highly addictive.
I never knew I could eat an entire head of cabbage until I covered it in pizza toppings and roasted it.

Now, you are probably well acquainted with cabbage in its head form,
but might be new to the roasted cabbage game.
Allow me to introduce you to this versatile diet food:
The Cabbage Steak.
Step 1: Slice cabbage into halves and then realize you need new knives.
This step can be cumbersome because slicing cabbage sucks and, fun fact, was
the inspiration for that story The Sword In The Stone.
Take your time with this step. If you get 4 good steaks, you’ve won.
Step 2: Top your fake steaks with good Pesto, real feta,
and Parmesan cheese.
Use a silicone brush instead of a spoon to make your life easier.
You did just slice a ton of cabbage. You’ve earned it.
THEN, top with sliced tomatoes and hunks of marinated artichoke.
Step 3: Bake that fake steak for about 20 minutes.
You’ll know it’s ready when those healthy fats are melted, the cheese is bubbling, and you’re visibly drooling.
Top with MORE basil and Mediterranean Seasoning.
Why? Because you love flavor, that’s why!
But…moreso because fresh basil shouldn’t be roasted and must be added
post-baking or it turns brown and gross.

Mediterranean Roasted Cabbage Steaks with Basil Pesto & Feta
If you've ever wanted to eat an entire head of cabbage in one sitting, here's your recipe.
Ingredients
- 1 Small Head Cabbage, sliced into "steaks"
- 4 oz Basil Pesto
- 1 cup Shredded Parmesan Cheese
- 2 oz Feta Cheese, crumbled
- 2 small Tomatoes, sliced
- 5-6 Marinated Artichoke halves
- 1 tbsp Mediterranean Seasoning
- Fresh Basil, to garnish
- OPTIONAL TOPPINGS include olives, mozzarella, mushrooms, roasted red pepper, etc.
Instructions
- Heat oven to 400 and spray a large sheet pan with nonstick spray.
- Arrange the cabbage in a single layer on the sheet pan so the edges are all touching. Slather pesto on the steak halves and be generous as a lot will melt into the cabbage folds.
- Top with cheese and tomato and bake until the edges of the cabbage are crisp and all of the cheese is bubbly. About 20 minutes.
- Sprinkle with Seasoning and Basil. Serve HOT with an extra scoop of Pesto for dipping!
Notes
MACROS can be adjusted to your needs by reducing the amount of parmesan cheese or pesto, as these are the higher carbohydrate ingredients! And NET Carbs are 11 g total per slice.
