So the young people have this saying nowadays which goes a little something like this: “I can’t even”.
I. Can’t. EVEN ___.
That’s it. You DO NOT, under any circumstances, finish that sentence. Finish that sentence and you go from 31 year old single socialite blogger to 80 year old grandma who always has a lint-crusted piece of hard candy in her pocket book. Probably anise if had to guess.
SO this is a thing now.
What’s worse? I. Can’t. EVEN stop saying it.
Shoot. I finished it. Now I’m a grandmother.
Let’s not, dinner.
So lately I can’t even. This includes but is not limited to; laundry, dusting, removing the Quest Bar empties from the hidden nook of my driver’s side door, and dinner. All I really want in life is food that is hot and yummy without making me feel like a chub and can be ready within five minutes of me walking in the door. Maybe ten if I put on yoga pants first.
My super fave find at TJ Maxx (nickname TJ’s) is Avocado oil and when you pair that with vegetables of the green variety and get your oven roasting hot, it’s all you need for dinner.

This one time, I ate a piece of steamed broccoli. It was gross. I don’t even think there was oil or cheese on it. (insert frownie face here)
Garlicky Roasted Broccoli
& Green Beans
1 12oz bag Pre-cut Broccoli, raw (because this is when you can’t even…cut up broccoli)
1 12 oz bag Green Beans, raw
3-4 tbsp Avocado Oil
1 tbsp Garlic Powder (or three cloves garlic, mashed)
Shredded Parmesan Cheese for Sprinkles
Preheat oven to 450º and line baking sheet with foil. In a large bowl, combine broccoli, green beans, and oil. Toss to coat. (If you are using fresh garlic, add it to the oil before tossing)
Transfer this health food monstrosity to baking sheet in an even layer. Dust with Garlic Powder and roast for 10 minutes. Remove from oven, sprinkle with cheese and return to oven for 5-10 minutes. Serve hot or cold because both are amazingballs.
AND that’s how you have a health food quickie without all of the guilt or wasted time food prepping. Fifteen minutes, tops. I’d say as far as quickies go, it’s the best I’ve ever had.
