Drool Worthy: Healthy(ish) Peanut Butter Bites!

Remember that game we all used to play in elementary school? You know, the one where you list the three things you would take with you to a deserted island? There were the kids who had their favorite books, or games, and even practical things like matches and other survival gear…And then there was me, who resisted the urge to put Reese’s Peanut Butter Cups as #1 but it was the truth. Those little suckers ran my life and still sort of do if my guard is down on the big candy holidays.

Obviously, I needed to create an alternative…

Slightly-Sinful Peanut Butter Bites

The Goods:

Makes about 12 bites, depending on how many you eat before they make it to the freezer.

3 tbsp Peanut Butter (I use Jif Natural because it’s amazing)

2 tbsp Almond Flour

2 to 3 tbsp Swerve Confectioner’s Sugar (If you are not trying to make this low carb, use regular Confectioner’s Sugar.)

Sea Salt to sprinkle atop the bites

Prepare a cookie sheet with parchment paper. No spray is needed as these babies require no baking. Add all ingredients into a small mixing bowl and combine until smooth. Scoop approx. 1/2 tbsp of pb mix, roll into a ball, and add to prepared cookie sheet. Using a fork, gently press down to slightly flatten each ball. Dust with sea salt and place in freezer.

Consume right away or, if you have any patience whatsoever, after about 1 hour.

And that is it! Easy, right? Now if you’ll excuse me, I need to go eat two of these for breakfast, then get my butt to work.
