10 Simple Low Carb & Fruit-Filled Recipes For Spring

Veggies are great but have you tried fruit? Because it’s basically dessert!
Whip up one of these easy recipes and fall in love with fruit again.


We all love a good chocolate cake or cinnamon roll every now and then, mostly now, but there are just certain cravings that a chocolate cake can’t fix. 

Bold, I know.  

But if you’re like me and you’ve stocked on up fruits to later let them rot in the depths of your refrigerator, try one of these amazingly healthy and equally delish recipes. 

No Fresh Fruit? No Prob. 

Every single recipe here is totally doable with frozen fruit! Just swap it cup for cup with whatever frozen fruit you have on hand. Literally, you could make almost anything work here guys.

Gluten-Free Blueberry Galette– for those times when you want pie but can’t be bothered by a pie tin, make a galette!

Galettes are fruit filling loosely held together by a simple pie crust (ours is gluten-free and sugar-free). The more rustic and messy, the better. 

Brunch-worthy Blueberry Coffee Cake– I’ve said it before and I’ll say it again: coffee deserves cake. YOU deserve cake. Maybe now more than ever!

This moist, blueberry filled coffee cake is really perfect to pair with any berry and can be made ahead of time and served the next day.

Not feeling fancy? This recipe doesn’t have to be layered. Just toss it all in a blender and it still tastes ah-mazing. 

Raspberry Cream Filled Donuts– Donuts with a fruity whipped cream filling. No other explanation is necessary.

Low Carb Strawberry Short Cakes with Greek Yogurt is the epitome of healthfood acting like desserts!

This one has chia seeds so it could honestly pass for breakfast, right?

Gluten-Free Balsamic Roasted Strawberry Galette – Just like the blueberry version, this galette takes advantage of those BOGO strawberries that you end up buying and then can’t decide how to use them before they go bad…tomorrow. 

Quick tip: Those extra berries that you might not use *right away* can easily be sliced, washed, and frozen! Just make sure you pat them dry and freeze them on a cookie sheet to prevent clumping. Then toss them in a container and save them for a rainy day.

Super Soft (not eggy!) Keto Strawberries & Cream Mug Cake– The best mug cake I’ve ever made was one that took as much planning as a regular cake, but I’m not mad at it. Some things (even single-serving things) are worth the effort!

And to make things easier, triple or quadruple the recipe and keep it in individual bags or small containers. Then just add the wet ingredients when you need a little cake in a big hurry. 

Peaches


Grilled Peach  Brie & Basil Salad with Simple Balsamic Dressing– Nothing beat the combo of warm peaches and a triple cream brie. Until I added Lolli’s Cinnamon Peacan Cookie Clusters, and then it was beaten.

Warm Ginger Peach & Walnut Breakfast Salad {Low Carb & Gluten Free}– Another salad with peaches and healthy stuff! But this time it’s breakfast-y because of the sweet greek yogurt topping. 

Nut free? No problem!
This recipe works great with just toasted coconut. Add some hulled hemp seeds or toasted flax for more protein.
