Quick tip: Those extra berries that you might not use *right away* can easily be sliced, washed, and frozen! Just make sure you pat them dry and freeze them on a cookie sheet to prevent clumping. Then toss them in a container and save them for a rainy day.
Super Soft (not eggy!) Keto Strawberries & Cream Mug Cake– The best mug cake I’ve ever made was one that took as much planning as a regular cake, but I’m not mad at it. Some things (even single-serving things) are worth the effort!
And to make things easier, triple or quadruple the recipe and keep it in individual bags or small containers. Then just add the wet ingredients when you need a little cake in a big hurry.
